La vendemmia nel passato.
In passato il momento in cui anticamente si effettuava la vendemmia era letteralmente un momento di festa e di aggregazione sopratutto nei luoghi paesi interni del Cilento, questo era uno degli eventi più attesi durante tutto l’anno.
La prima operazione per la produzione del vino consisteva ne riempire un tino d’acqua tale da ripulirlo dal tartaro che si era formato dopo l’utilizzo dell’anno precedente; per l’occasione anche le damigiane venivano pulite e messe ad asciugare a testa in giù, e stessa operazione veniva fatta per i barili, per l’imbuto col filtrante, e per il sacco di canapa, utilissimo per filtrare il prodotto.
La raccolta dell’uva era un compito prettamente delegato alle donne, le quali con vestiti da festa tipici dell’occasione, tra balli festosi cantavano mentre tagliavano i grappoli d’uva con delle forbici adatte all’operazione, avendo cura di eliminare gli acini ammuffiti e quanto altro fosse da scartare.
L’uva, una volta terminata la raccolta, veniva posta nel tino, sulla cui parte inferiore si trovava un foro che permetteva il versamento della sua spremitura in una sottostante tinozza e chiaramente il preliminare per la spremitura era un’accurata lavanda dei piedi dell’addetto alla pigiatura.
Gli asini ne trasportavano anche due barili di succo pigiato nei luoghi dedicati alle fasi successive di lavorazione. Tra queste la prima era quella della ‘fermentazione. Infine, il mosto veniva immesso nelle damigiane in base a dei tempi stabiliti secondo le fasi lunari, e una volta terminata del tutto la sua fermentazione, veniva travasato in altre damigiane e salvaguardato in superficie da uno strato di olio che ne proteggesse l’aroma e ne impedisse l’acetificazione.
La vendemmia solitamente avveniva nel mese di settembre e già a metà novembre si poteva gustare il vino nuovo.
Oggi, però, purtroppo, il metodo di raccolta è ben diverso e più industriale. Dell’antica festa resta poco.
